Mcguffey's Blackened Chicken Pasta Recipe

I am in Culinary school and I want to make this recipe for my local VFW. So as I read the recipe it is equal chicken to pasta 1 pound each? also I was going to do this with shrimp, your opinion?

First, filet the chicken breasts. You want to have 4 pieces of chicken. Then you will want to make homemade blackened seasoning. You can use store bought blackening spices, but it is very easy to make it from scratch.

3 chicken breasts or 4 thighs (skinless, boneless)blackened spices (recipe below)1/ 2 lb. fettuccine pasta, uncookedOlive Garden Alfredo sauce (recipe below)vegetable oil for cooking

Heat a tablespoon or two of oil in a skillet or grill pan over medium heat. Pat the chicken dry with paper towel. Coat the chicken pieces with a little bit of oil and then smother them in the blackened spices (also great on fish by the way) add to the skillet and cook until juices run clear. 2ff7e9595c
